Ingredients
15-20 Ian’s Fish Sticks
1 cup baby tomatoes
3 cups broccoli florets
½ lemon, sliced into ¼ inch wheels
1 tablespoon olive oil
¼ teaspoon garlic powder
¼ teaspoon salt
1 teaspoon lemon zest
2 tablespoons lemon juice
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment paper or a silicone mat.
2. Place Fish Sticks in the middle of prepared baking sheet and drizzle with 1 tablespoon lemon juice.
3. In a large bowl mix tomatoes, broccoli, lemon slices, olive oil, garlic powder and salt.
4. Place broccoli mix around the Fish Sticks then bake for 10 minutes.
5. Remove baking sheet from oven, flip Fish Sticks, then bake for another 13-15 minutes or until internal temperature of Fish Sticks reaches 165°F and broccoli begins to brown.
6. Remove from oven and sprinkle lemon zest and lemon juice over broccoli mix and use tongs to gently stir it together and enjoy.
