Ingredients
For the Summer Salsa
½ cup cherry tomatoes, roughly chopped
2 tbsp red onion
2 cloves garlic
1 tbsp lime juice (about ½ lime)
¼ cup cilantro, chopped plus more for garnish
¼ tsp salt
For the Bowl
2 cups mixed greens
½ - 1 cup prepared rice
½ cup cucumber, diced
1/3 cup fire roasted corn
¾ cup summer salsa
3 Ian’s Garlic & Herb Salmon Bites
Cilantro, for garnish
Flakey sea salt, for garnish
Lime, for garnish
Instructions
1. Cook Ian’s Garlic & Herb Salmon Bites according to package.
2. Meanwhile, combine all summer salsa ingredients in a small mixing bowl and set aside.
3. Fill a serving bowl with 2 cups mixed greens and ½-1 cup prepared rice. Then add cucumber, fire roasted corn, and summer salsa and top with cooked salmon bites.
4. Garnish with optional cilantro, flakey sea salt, and lime and enjoy!
