Ingredients
14 Ian’s Chicken Nuggets
2 tablespoons whole grain mustard
¼ cup red wine vinegar
2 tablespoons olive oil
2 teaspoons maple syrup
1/8 teaspoon sea salt
Pinch of pepper
2 tablespoons raisins
1 honeycrisp apple, thinly sliced
5 ribs of celery, sliced thinly on a diagonal
Instructions
1. To make the dressing, whisk together mustard, vinegar, maple syrup, sea salt and pepper.
2. Continue whisking mustard mixture while adding olive oil in a slow stream until fully incorporated.
3. Stir in raisins and set dressing aside.
4. Preheat the oven to 400°F and place Ian’s Chicken Nuggets on baking sheet.
5. Bake for 14 minutes or until internal temperature is 165°F.
6. Meanwhile, mix apples and celery and half of dressing in a large bowl.
7. Divide salad and Chicken Nuggets evenly on 2 plates and drizzle remaining dressing over chicken. Garnish with celery leaves if desired.
